Densing without a vacuum blender sounds like an impossible task, but after months of testing I found how to do it using Vegg White. Densing is a technique developed by Iain McPherson, where fat gets blended into a liquid to build a richer texture and mouthfeel, all without the need for emulsifiers or specialty ingredients - but this technique also calls for specialty equipment. Vegg White changes that, stabilizing the emulsion well enough that a regular blender gets the job done. So today I'll put it to the test with two alcohol-free cocktails, since without alcohol to help hold everything together, it's the toughest test the technique could get.
